Since it is the fall and getting cooler, it is becoming sweet potato season! This simple side-dish recipe is a winner for any time. The ingredient list is simple:
2-3 large sweet potatoes (or yams)
1/4 cup milk and
1/4 cup orange juice
2 Tbsp butter
2 tsp grated fresh ginger
1/8 tsp nutmeg
Salt/Pepper to taste
Peel and chop the sweet potatoes into 2 inch pieces

Drain and put back in warm pan. Add all the other ingredients and either puree the cooked potatoes in a food processor *OR* (because I hate washing my food processor) use a hand mixer.

This is an alternative way of mashing potatoes and I love the fact I only have to wash the two beaters. Plus it works great. Beat the potato mixture on med-high for about 1-2 minutes, or until smooth.
