I am not sure why I rarely think to make curry in the crock pot. It is the perfect dish for that slow low cooking, since it gives all the flavors plenty of time to meld together in the slow cooker. During the busy work week, it is a great alternative to take out.
Today’s recipe is a super quick and easy Coconut Curry recipe made in the slow cooker and I have once again teamed up with my favorite brand of Organic chicken, Foster Farms, to show you just how easy it is to get a great home cooked meal on the table without too much effort.
FosterFarms Organic chicken, which is readily available in Safeway stores across the Bay Area is American Humane Certified and is now Non-GMO Project Verified. That makes it my go-to brand of chicken.
As for the rest of the recipe:
Coconut Curry Chicken:
2 Foster Farms Organic Chicken Breasts in 1-2 inch pieces
1 red pepper, chopped and seeded (I used organic)
2 small potatoes, peeled and chopped (I used organic)
2 cups chicken broth (I used organic)

1 can coconut milk (unsweetened – I used organic)
3 Tbsp. sweet curry powder
1 tsp. cumin
1 tsp. cumin
1/2 tsp. cayenne pepper (or to taste)
1/2 tsp. coriander
1/2 tsp. salt
Pepper to taste
Corn starch for thickening
In the slow cooker combine chicken, potatoes and peppers.In a separate bowl, mix together remaining ingredients.
Pour mixture over the chicken and vegetables and stir until they are well coated.
Cook on low for 4-5 hours or on high for 1-3 hours. You can thicken the sauce with the corn starch if you find it too thin.
I served this curry over quinoa, which makes this meal a great gluten free option.
You also can serve it straight, without rice or quinoa, since it does already include potatoes in the curry itself.
Even though it was a tad spicy, my kids actually ate it all up. I wasn’t expecting that, I have to admit, but it makes me feel good knowing that their chicken was locally grown right here in California by a family-owned business.
So next time you are considering take out, you may want to turn to the slow cooker. It does all the work for you and there is no need to tip!
