Spring is here and it is finally warm enough to fire up the grill! I love cooking outside and I especially love skewers/kabobs since they are so easy to eat and cook so quickly. My family actually raved about these Lemon Chicken and Asparagus skewers. The kids love eating anything off a stick, and my husband actually complimented me on the asparagus-lemon flavor profile. (Not something that happens very frequently at our house!)
Plus the recipe is a favorite of mine because it is made on the grill (NO DISHES!) and I even marinate the chicken in a bag so, aside from the cutting board, the clean-up is virtually nothing.

And the best part? The recipe only has 4 ingredients!
Lemon Pepper Chicken and Asparagus Kabobs
- 1 pound Foster Farms Organic Chicken breast (cut into 2 inch pieces)
- 2 tablespoons lemon pepper seasoning
- 2-3 lemons cut into large segments
- 1 pound organic asparagus (thicker stems are easier to skewer)
- Olive oil
Set grill to medium high heat while you prepare the chicken. If you are using bamboo or wooden skewers you also want to soak them in water to prevent burning.
Place the 2-inch Foster Farms chicken pieces in a zip top bag and add the lemon pepper seasoning. (I don’t add oil since I will oil the grill grates, but you can add a tablespoon or so of olive oil if you are worried about the chicken sticking). Remove the air and allow to sit at least 10 minutes. (You can allow the chicken to marinate for up to 12 hours in the fridge as well. The longer the marinade time the stronger the flavor).
Right before grilling cut the lemons into large wedges and asparagus into 3-4 inch pieces. Thicker slices are better so they don’t tear off the skewer. Assemble your kabobs. I alternated 2 pieces of asparagus-lemon-chicken-2 pieces of asparagus-lemon-chicken which allows the lemon to impart its flavor to both the chicken and the asparagus.
Using thicker asparagus stems also makes it easer to skewer them.Grease the grill thoroughly with an oil soaked paper towel. The chicken and lemons will want to stick otherwise.
You will want to turn the kabobs at least once during grilling to get an even cook.
Grill for 4-6 minutes (or until chicken reaches temperature of 165º).These kabobs are light and flavorful. They aren’t at all heavy or greasy.
They have a lot of fresh spring flavor, and because all the ingredients are organic, including the Foster Farms chicken, I am confident feeding them to my familyDinner doesn’t have to be complicated or messy to be healthy and delicious!
