Yes, yes.. I know. ANOTHER pork recipe. But I couldn't help myself. When top loin roasts went on sale for $1.99/lb I couldn't pass it up. And this is a good one I promise! (I mean, I modified the recipe from Paula Deen so how bad could it be right?)
Apricot Glazed Pork Loin
(Slow Cooker version)
1 (2-3 pound) pork loin roast
1/2 of a 1 pound bag baby carrots
1 medium red onion, thickly sliced
1/2 cup chicken stock
1 (10 ounce) jar apricot preserves
1-2 tablespoons Dijon (or spicy brown) mustard
1/2 tsp thyme
Salt and pepper to taste
Throw your carrots/onions in the bottom of the slow cooker and top with the roast. Sprinkle it liberally with salt and pepper
Mix together stock, preserves, mustard and thyme. Salt and pepper to taste.
Spread glaze mixture over tenderloin.
Cover and cook on low for 6 hours, or until tender.
Enjoy! Even my pork hatin' husband ate it. And I am using the leftovers for bar-ba-que sandwiches since the sweet/tangy glaze would lend itself perfectly to b-b-q sauce! Total win!
