Rosemary and Sage Herb Crusted Pork Roast (Simon & Garfunkel's Recipe)

I have to laugh, because when I was trying to title this recipe, I couldn’t get the Simon And Garfunkel song** "Scarborough Fair" out of my head. I mean, come on! The ingredient list is the title of their album!

And since I’m a dork, I decided just to roll with it.  I think the songwriter was onto something, because that flavor profile is perfect when paired with a pork loin roast.

The recipe is super simple (and a basic modification of Paula Deen’s Herb Crusted Tenderloin).  Baking it for a short period on high heat forms a crust and then reducing the temperature and finishing the pork on low helps keep the pork moist while cooking it all the way through.  You can use a tenderloin with this recipe instead of a full loin roast, but be sure to reduce the cooking time!

Rosemary & Sage Herb Crusted Pork Loin
Boneless Pork Loin Roast (2-4 pounds)

2 TB Olive Oil
2 tsp parsley flakes (4 tsp fresh, minced)
1 tsp dried rosemary (2 tsp fresh, minced)
1 tsp dried sage (2 tsp fresh, minced)
2 tsp dried thyme (4 tsp fresh, minced)
2 tsp garlic powder (4 tsp fresh, minced)
2 tsp onion powder
1 TB Salt
2 tsp Pepper

Preheat oven to 475.

Mix the olive oil and the herbs in a small bowl to form a paste.  Using a basting brush (or your fingers) generously smear the paste all over the pork, covering both sides.

Roast the pork for 30 minutes at 475 turning once (to brown both sides)

Reduce the oven temperature and finish cooking at 425.  I used a 2 pound roast and only needed about 30 more minutes of cooking until it hit an internal temperature of 145.  Using an instant read thermometer is good, and even better is using a thermometer that beeps when you hit the correct temperature.  This one is similar to the one I use and I LOVE it!

But there are some super cool ones out there.. Wireless with a doneness meter?!? YES PLEASE!

Make sure you let the pork rest (it will continue to cook) for at least 3 minutes. I leave mine for closer to 15. Rosemary pork loin
I slice it to serve and added some herbed mashed potatoes and broccolini.
