Oven Chicken Fajitas


Hey everyone!  Mandee from The Kitchen Wife here and I have a GREAT recipe for you today, Oven Chicken Fajitas.  


November is officially upon us, and the holiday season is here!  What does that mean you ask?  Well, it means that everything in our lives is about to be turned upside-down and everyone is going to lose their minds.  However, your dinner doesn't have to be difficult.  My easy Oven Chicken Fajitas are the perfect meal for those crazy weeknights.  I can't wait to share it with you so...

Let's get started!

Oven Chicken Fajitas:
*Prep Time:  10 min *Cook Time: 30 min *Difficulty:  Easy  *Servings: 4-6 Fajitas

Ingredients:


  • 1 lb Boneless Skinless Chicken Breast, cut into strips. 
  • 2 Bell Peppers, sliced, your choice of colors
  • 1 Red Onion, sliced
  • 4-6 Cloves of Garlic, minced
  • 2-3 Tbsp Extra Virgin Olive Oil
  • 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1 tsp Salt
  • Tortillas, your choice
  • Toppings of your choice
To begin you will need to preheat your oven to 400 hundred degrees.  



Place the chicken, pepper, onion, and garlic onto a lined baking sheet.


Now drizzle on the oil.

Yes, Yes, I know I'm using a spray in this picture, but when I went to make this I realized I was out of oil so, Just like Julia Child, I improvised.


Next season everything with the salt,


 cumin,


and chili powder.


Toss everything together with your hands until the spices coat everything!


Place in the oven for 30 minutes.


Just before your fajita mixture is about to come out of the oven, you will want to warm up your tortillas.

You can do this in the oven by wrapping them in foil, or in the microwave, but my personal favorite way is to place them over the open flame of my stove for a few seconds until they are tender and slightly charred.


Then I place them in foil.


After 30 minutes your Oven Fajitas will be ready to go!

PRINTABLE RECIPE

Ingredients:
  • 1 lb Boneless Skinless Chicken Breast, cut into strips. 
  • 2 Bell Peppers, sliced, your choice of colors
  • 1 Red Onion, sliced
  • 4-6 Cloves of Garlic, minced
  • 2-3 Tbsp Extra Virgin Olive Oil
  • 1/2 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1 tsp Salt
  • Tortillas, your choice
  • Toppings of your choice
Directions:
  1. Preheat the oven to 400 degrees.
  2. Place the chicken, peppers, onion, and garlic onto a lined baking sheet. 
  3. Drizzle the oil over everything and season with the salt, chili powder, and cumin.
  4. Toss everything together until everything together until it is coated with the seasoning.  
  5. Place in the oven for 30 minutes. 
  6. While the fajita filling is cooking, you will heat your tortilla shells.
  7. Once the filling is finished cooking, assemble and add the toppings of your choice.  
  8. Serve and Enjoy!
